Jerzy Potocki studiował informatykę stosowaną na Wydziale Fizyki Technicznej i Matematyki Politechniki Warszawskiej. W wieku 20 lat współtworzył firmę doradczą TAKE IT – Doradztwo Personalne. Był współorganizatorem organizacji BEST – Board of European Students of Technology, studenckiej inicjatywy umożliwiającej dialog, współpracę i wymianę pomiędzy studentami europejskich uczelni technicznych. Jest także absolwentem programu Master HEC/SGH przygotowującego do sprawowania funkcji menedżerskich.

Angażował się w wiele projektów start-up'owych. Jest m.in. co-founderem MIT Enterprise Forum Poland a wcześniej był także wspólnikiem w EnterNet. Ostatnio pracował jako co-founder i prezes zarządu polskiej części firmy AIMS International, specjalizującej się w rekrutacji na stanowiska kierownicze i specjalistyczne. Przez kilka lat był członkiem światowego zarządu AIMS.
